For producers it is an attractive low input crop capable of fixing its own nitrogen and improving the soil where it grows. For consumers it offers a protein rich alternative to the potato and as such is a unique unprocessed protein rich plant product which has the potential to be a key component of the protein transition

Aardaker has the culinary versatility of a potato, it can be boiled, fried, roasted, sautéed, mashed, made into soup or even polenta, the limit is your imagination!
