Aardaker (Lathyrus tuberosus) is a unique crop perfectly suited to the needs of producers and consumers alike. For producers it is an attractive low input crop capable of fixing its own nitrogen and improving the soil where it grows. For consumers it offers a protein rich alternative to the potato and as such is a unique unprocessed protein rich plant product which has the potential to be a key component of the protein transition

Aardaia has been working with aardakers for five years now, exploring their potential and figuring out both how best to grow this species and how to improve the genetic stock so that its incredible potential can be brought forward onto the plates of today.

Aardaker has the culinary versatility of a potato, it can be boiled, fried, roasted, sautéed, mashed, made into soup or even polenta, the limit is your imagination!
